Healthy Banana Nut Pineapple Bread
Ingredients:
2 cups oat flour
1/3 cup each of golden flax meal, spelt bran and large flake oats
2 cups dates (pits removed)
1 teaspoon baking soda
2 teaspoons ground cinnamon
3/4 teaspoon salt
1 cup chopped walnuts
3 large eggs
1 cup unsweetened applesauce
2 cups mashed very ripe bananas
2 teaspoons vanilla extract
1 (8 ounce) can of unsweetened crushed canned pineapple, drained
Directions:
Preheat oven to 350 degrees F. and prepare a non stick bundt pan. In a large bowl combine the oat flour, flax meal, spelt bran, oats, baking soda, cinnamon and salt. Stir in walnuts. In a food processor or high powered blender (I use my Ninja) add the dates, eggs, apple sauce, bananas, vanilla extract and crushed pineapple. Blend until smooth. Add the wet blended ingredients to the bowl of dry ingredients and stir until moistened and blended. Pour into the bundt pan and bake 50 to 55 minutes or until a knife come out clean. Cool on a rack for 10 minutes then remove from pan. Serve when cooled. Enjoy. By Carol Johns
