Healthy Oatmeal Raisin Cookies


Ingredients:

2 cups oat flour

1 teaspoon baking soda

1 teaspoon baking powder

1 teaspoon kosher salt

1 cup unsweetened apple sauce

2 cups pitted dates

2 large eggs

2 teaspoons vanilla

3 cups oats (not instant)

1 1/2 cups raisins

Directions:

Preheat oven to 350 degrees F.

Mix together the first 4 dry ingredients in a bowl.  Put the applesauce, dates, eggs and vanilla in high powered blender (I use my Ninja) and blend until creamy.  Add in the first 4 ingredients from the bowl to the blender and blend until just mixed evenly.  Transfer the mixture back to the bowl and mix in by hand the oats and raisins.  Take a large cookie sheet and cover with parchment paper.  Using a tablespoon, scoop mixture and drop on to cookie sheet about 2 inches apart.  Makes about 36 cookies.  Once all dollops of cookie mixture are on the baking sheet, flatten cookies with a lifter or fork and then bake for 13 to 18 minutes or until done.  Remove from oven.  Let sit on the baking sheets for a few minutes before transferring to a wire rack for cooling.  Enjoy!
