Healthy Bran Banana Oat Muffins


 

 

Ingredients:

1 1/2 cups spelt bran flour

1 cup rolled oats (not instant)

1/2 cup pits removed dates

2 teaspoons baking powder

1 teaspoon baking soda

1/2 teaspoon salt

1/2 teaspoon cinnamon

1 egg

3/4 cup almond milk

1/3 cup crushed unsweetened pineapple

1/2 teaspoon vanilla extract

1 cup mashed ripe bananas

1/4 cup chopped walnuts

Directions:

Combine the spelt bran flour, oats, baking powder, baking soda and cinnamon in a bowl.  In a high powered blender, I use a ninja combine the dates, egg, almond milk, crushed pineapple, mashed banana and vanilla extract until smooth.  Stir together the dry ingredients with the wet.  When nicely combined hand stir in the walnuts.  Line muffin tins with paper baking cups and divide the batter among them.  Should make about 12 muffins.  Bake at 400 degrees F (205 degrees C) for about 23 minutes or until done.
